(makes 3 cups)
1/3cup light vanilla or lemon yogurt
2tbsps shredded coconut
2 kiwis, peeled and sliced
1cup fresh pineapple chunks
1 medium banana,
sliced Mint sprigs (optional)
Directions:
1.Mix the yogurt & coconut in a small bowl, cover, & chill for 20 min for the flavors to develop.
2.In a medium bowl, mix the kiwis, pineapple, & banana. Gently stir in the yogurt mixture.
3.Serve garnished with mint sprigs (if using).
