Citrus Salad w/Star Anise Syrup

FROM EPICURIOUS (epicurious.com)
(makes 8 servings)
1/3cup sugar
1/3cup water
3 whole star anise
5 large ruby red or pink grapefruit
4 blood oranges
Directions:
1. Dissolve sugar in water in a small heavy saucepan over medium heat, stirring.
2. Add star anise & simmer 5 min. Let stand off heat 30 mins.
3. Cut peel, inc white pith, from fruit with a sharp knife. Cut segments free from membranes into a bowl.
4. Squeeze juice from membranes into bowl.
5. Add syrup w/star anise to fruit & juice & stir gently.
6. Remove star anise before serving if desired.

Tropical Ambrosia

(makes 3 cups)
1/3cup light vanilla or lemon yogurt
2tbsps shredded coconut
2 kiwis, peeled and sliced
1cup fresh pineapple chunks
1 medium banana,
sliced Mint sprigs (optional)
Directions:
1.Mix the yogurt & coconut in a small bowl, cover, & chill for 20 min for the flavors to develop.
2.In a medium bowl, mix the kiwis, pineapple, & banana. Gently stir in the yogurt mixture.
3.Serve garnished with mint sprigs (if using).
