Cold Dessert Soup w/Winter Squash, Orange, Star Anise & Ginger

squash soup for dessert? only believing it because i have a soft spot for squash, and i think the idea of soup for dessert is so cool

FROM LUCULLIAN DELIGHTS (lucullian.blogspot.com)
(makes 3-4 servings)
10-5 oz winter squash, diced
2-1 cups water
4 or more star anise
juice of 3 small oranges
sugar or honey, as much you like
fresh ginger, grated or finely chopped
Directions:
1. Simmer the winter squash in the water & star anise for about 15 minutes.
2. Take out the anise & then run the rest in a blender until smooth.
3. Add sugar, stir & leave it to cool down.
4. Add orange juice and as much ginger you feel like.
5. Put in the fridge to get really cold.Serve.

Squash "Pie"

FROM ELANA'S PANTRY (elanaspantry.com)
she says it's more of a souffle than pie; hence the quotation marks
(serves 8)
2 medium butternut squash, cut in half, seeded
3tbsp butter/grapeseed oil
2 eggs
1tbsp vanilla extract
1tsp cinnamon
¼tsp nutmeg
1/2tsp celtic sea salt
Directions:
1. Bake squash in the oven at 350°F for 40mins, until soft
2. Scoop squash out of skin, discarding skin
3. Place squash in food processor with butter/oil, eggs, vanilla, cinnamon, nutmeg & salt
4. Puree until smooth & creamy
5. Place in a 9 inch tart pan or a casserole dish & bake for 40mins
6. Serve
